Orange Ginger Marinated Salmon

Protein – 3.8 ounces salmon
Carb – rice (1 cup)
Fat – N/A (included with salmon)
Veggie – asparagus
Additional – freshly squeezed orange juice, ground ginger, soy sauce, garlic
Recipe Notes:
1) In a large ziplock bag, combine the following: juice of 1 large orange, zest of 1 large orange, 2 tablespoons soy sauce, 2 cloves garlic (minced), 1/2 teaspoon ground ginger
2) Place precut salmon in bag and allow it to marinade for a minimum of 30 minutes (preferably a few hours)
3) Cook using method of choice (skillet for 5-6 minutes each side, baking/steaming in oven at 350 degrees for about 22-24 minutes)
4) Serve over rice and alongside roasted asparagus
