Protein – 93% lean ground turkey OR 90% lean ground beef
Fat – N/A (included with turkey/beef)
Additional Veggies/Ingredients – peppers, onion, diced tomatoes, low sodium chicken broth
Recipe Notes:
1) Bring 3 cups chicken broth, 1 can of diced tomatoes, and 1 tsp each of dried parsley and dried Italian seasoning to a boil, and then reduce to a simmer while the rest of the meal cooks
2) Slice 2 peppers (1 green bell, 1 red bell) and 1 onion, season with S&P, garlic powder, and chili powder – roast at 400 degrees for 20 minutes
3) Brown ground turkey (or lean ground beef), until fully cooked
4) Cook rice according to package (preferably in broth, for flavor)
5) Portion and assemble – rice, covered with measured ground turkey and ¼ of roasted veggies – ladle on 1 cup of liquid, garnish with cilantro
