Strawberry Balsamic Pizza with Chicken

Carb – whole grain naan (Stonefire brand – 29 grams) / lower carb alternative: pita (Joseph’s Bakery – Oat Bran & Whole Wheat variety – 10 grams)
Fruit – strawberries, sliced (3/4 cup)
Protein – chicken breast (2 oz., cooked)
Fat – ¾ oz. mozzarella cheesebrow
Additional – sweet onion (thinly sliced), balsamic vinegar, Sriracha (optional), parsley
Recipe Notes:
1) Balsamic reduction – 1 cup balsamic vinegar in small sauce pan – bring to a boil, then reduce to a simmer for 4/5 minutes – vinegar will reduce by half of it’s original volume – stir in 1 teaspoon Sriracha (this amount of glaze will be far too much for one meal, save the rest!)
2) Cook chicken using method and seasoning of choice (pictured: baked chicken, seasoned with S&P, garlic powder, chili powder, cayenne pepper)
3) Dice chicken and mix with cheese, half of your strawberries, ¼ sliced onion – spread over naan evenly
4) Broil for 5-6 minutes, until brown and crispy
5) Allow to cool slightly – sprinkle with last half of strawberries and parsley that’s been finely chopped
6) Drizzle with balsamic reduction
