Turkey Lasagna Rolls

Carb – wheat lasagna 12 sheets
Protein – 99% lean ground turkey
Fat – mozzarella cheese (dependent on plan)
Additional Veggies – onion, garlic, tomato sauce, large side salad
Recipe Notes:
1) Cook 12 lasagna sheets as directed on package
2) Prepare casserole dish by spreading 1/4 cup of tomato sauce (pure, not pasta sauce) on the bottom
3) In a skillet, brown 1lb ground turkey until cooked through, over medium heat
4) Add 1 medium onion that’s been finely diced – cook until softened (3-4 minutes)
5) Add 2 cloves minced garlic – cook until fragrant (1 minute)
6) Add ½ cup tomato sauce, 1tsp salt, 1tsp pepper, 2 TBS freshly minced parsley, red pepper flakes (to taste) – simmer until thickened (8-10 minutes)
7) Assemble each roll by spreading 1/2 (by weight) of meat mixture, and rolling. Place seam side down in the casserole dish
8) Top each roll with ½ TBSP. of sauce, cheese (split portion of cheese between the amount of rolls that will be eaten within a sitting)
9) Cover the dish with foil and bake for 20-25 minutes at 350 degrees
10) Serve with side salad
