Buffalo Chicken Sweet Spuds
Ingredients:
– 2.75 oz chicken breast cooked and shredded
– 1 oz 0% fat Greek yogurt (save a little to put on the top)
– 2 Tbl Franks Red Hot Wings buffalo sauce (more or less to taste)
– Salt and pepper to taste
– Scallions sliced thin
– 1/4 cup avocado diced
– 8.5 oz baked sweet potato
Directions:
1) Slice open baked sweet potato. Create an area to stuff the filing.
2) In a bowl, mix together shredded chicken breast, Greek yogurt and wing sauce. Add salt and pepper to taste.
3) Place filling in sweet potato. Top with avocado, remaining yogurt and scallions.
Notes:
You can also mash the avocado and add it to the filling.
To reheat, place in a 350 degree oven for 10 min.
